3 sticks celery
2 heads of broccoli, cut into florets
3 medium zucchinis, cut into large chunks
1 cup of kale or spinach leaves, stems removed
1L of good quality chicken or vegetable stock or bone broth
Large handful of mint leaves
200ml coconut cream (or milk)
Juice of 1 lemon
1 tsp white pepper
Salt to taste
Heat the stock or bone broth in a large saucepan.
Add the celery broccoli, kale/spinch and zucchini and simmer until tender. Remove from heat and add mint, coconut cream and lemon, salt and pepper.
Blend with a blending wand or on a blender.
This is great as a starter or a light meal. To add more volume or texture, top with toasted nuts/seeds or crumbled feta
